Pancakes- a great baby led weaning friendly breakfast which is adaptable and delicious!
Pancakes
Here s the basic recipe (courtesy Jamie Oliver):
3 eggs
115g flour
1tsp baking powder
140ml milk
Separate the eggs. Whisk the whites until they form soft peaks. Put the flour, baking powder and milk in with the yolks and mix to form a batter. Fold in the beaten egg whites. Use a ladle and fry in a non stick pan over a medium heat until golden brown on each side. Voila!
I like to adapt the recipe and have recently used coconut milk instead of cows milk, and used 100g flour and 15g desiccated coconut, then mixed in a mashed banana. Yummy, and LO loved! Try with chopped up blueberries too
I also change up the flour using spelt, buckwheat etc for added flavour and nutritional value.
This recipe makes about 8 pancakes for me, so I make in a batch, eat half then fridge or freeze the other half!
