Potatoes are incredibly versatile and delicious, perfect for making fresh, tasty salads. Potato Salad
Ingredients:
2.2 lbs potatoes (boiled in skin)
3–4 medium yellow onions, finely chopped
2 pickled red peppers, chopped
3–4 dill pickles, chopped
Salt and black pepper, to taste
2 tbsp chopped fresh dill
2 tbsp chopped fresh parsley
Fruit vinegar, to taste
Instructions:
Boil potatoes in their skins until fork-tender. While still warm, peel and dice.
In a bowl, mash chopped onions with a bit of salt to soften.
Mix potatoes, onions, red peppers, pickles, dill, parsley, and seasonings.
Add vinegar to taste, stir gently, and serve warm or chilled.
Italian-Style Potato Salad with Tuna
Ingredients;
2 lbs potatoes (salad variety), boiled and sliced
1 small red onion (preferably purple), thinly sliced
1 can (5 oz) tuna in oil or water, drained
¼ cup sliced black olives
¼ cup sliced green olives
1 tbsp capers
1 tomato, seeded and diced
1 stalk celery (green part only), thinly sliced
Dressing:
2 tbsp red wine vinegar
¼ tsp salt
¼ tsp black pepper
3 tbsp olive oil
Instructions:
Mix the sliced potatoes, onion, tuna, olives, capers, tomato, and celery in a large bowl.
Whisk together dressing ingredients in a small bowl.
Pour over the salad and toss gently.
Chill slightly or serve at room temperature.
