Poached Smoked Carp
Ingredients:
3.3 lbs smoked carp
1 tbsp vegetable oil
1 tbsp olive oil
Juice of 1 lemon
Chopped fresh parsley, for garnish
Instructions:
Place the smoked carp in cold water and let it soak overnight to remove excess salt and soften the fish.
The next day, drain and cut the carp into pieces.
Place the fish into boiling water and cook for about 20 minutes or until tender.
Drain and place the pieces in a serving dish.
Drizzle with a mixture of olive oil, vegetable oil, and lemon juice.
Sprinkle with chopped parsley and serve warm or at room temperature.
Carp in Beer
Ingredients:
2.2 lbs cleaned carp (head and fins removed), cut into 4 pieces
2 medium onions, chopped
½ cup chopped fresh parsley
1 cup sliced leeks
2 cups dark beer
Salt and black pepper, to taste
2 tbsp margarine or butter
1 bay leaf
2 tbsp white vinegar
Juice of ½ lemon
2 tbsp breadcrumbs or crushed toast
1 tsp paprika (optional, hot or sweet)
1 tbsp sugar
1 tbsp flour (optional, for thickening)
Instructions:
Rinse the carp pieces well, season with salt and pepper.
In a large pan, sauté chopped onion in margarine until soft and golden.
Add parsley and leeks; sauté for 3 more minutes.
Add the fish and cook for about 5 minutes on each side.
Pour in the beer, add crushed toast or breadcrumbs, bay leaf, and paprika. Cover and simmer for 20 minutes.
In a separate small saucepan, melt sugar until it caramelizes, then add vinegar and lemon juice. Stir and add this to the fish.
If needed, mix flour with a bit of water to thicken the sauce. Simmer everything together a few more minutes and serve.
Fish Meatballs
Ingredients:
1.75 lbs white fish fillets (boneless, skinless)
2 medium onions, finely chopped
1 small clove garlic, minced
1 egg
Salt and black pepper, to taste
1 tbsp chopped fresh parsley
1 tbsp chopped celery leaves (optional)
2 slices stale bread, soaked in water or milk, then crumbled
Flour, for shaping
1 tsp paprika
Oil, for frying
Instructions:
Boil the fish briefly just until it can be flaked apart easily. Drain and remove any bones, then mince or process the meat.
In a pan, sauté chopped onions until golden, then let them cool.
Mix the fish with the sautéed onion, garlic, soaked bread, parsley, celery leaves (if using), egg, salt, pepper, and paprika. Mix well.
Shape the mixture into meatballs, using flour to prevent sticking.
Fry in oil until golden brown on all sides, or bake in the oven until evenly browned.
Optionally, place meatballs in a sauce (like tomato, onion, or garlic cream) and simmer for 10 minutes.
Serve with mashed potatoes, rice, polenta, pasta, or a vegetable side.
