Soft, fluffy homemade Kaiser rolls with a golden crust, perfect for sandwiches, breakfast, or as a side. Easy to make with simple ingredients and customizable with seeds.
Ingredients – Makes 16 Rolls:
6 1/2 cups all-purpose flour
2 1/4 tsp active dry yeast (1 packet)
1 cup warm milk
1 cup warm water
1/4 cup avocado or canola oil
1 tsp fine sea salt
2 tsp sugar
Optional Topping:
1 egg white mixed with 1 tbsp water for brushing
Seeds (sesame, poppy, sunflower)
Instructions:
- In a small bowl, combine warm milk, yeast, and sugar. Let sit 5–10 minutes until frothy.
- In a large bowl, mix yeast mixture, warm water, oil, salt, and flour gradually. Knead 8–10 minutes until smooth and elastic.
- Cover dough with a towel and let rise for 45 minutes until doubled in size.
- Divide dough into 16 equal pieces. Shape each into a smooth ball and let rest 30 minutes.
- Place rolls on a parchment-lined baking sheet. Use a sharp knife or spoon handle to gently press the top, creating the classic Kaiser roll pattern. Let rise another 15 minutes.
- Preheat oven to 425°F (220°C). Brush rolls lightly with egg wash (optional) and sprinkle seeds if desired.
- Bake 12–15 minutes until golden brown. Remove from oven and cover with a towel to keep soft. Serve warm.
Notes:
For extra flavor, brush rolls with melted vegan butter after baking.
Adjust seeds or leave plain for a simple, soft roll.
Dough can be refrigerated overnight for a slow-rise flavor boost.
