Flaky and savory Feta and Spicy Sausage Rolls, perfect for breakfast, snacks, or parties. Easy homemade rolls with buttery dough, crumbled feta, and flavorful sausage.

Ingredients – Dough:

5 cups all-purpose flour

3/4 oz fresh yeast (about 2 1/2 tsp active yeast)

1 1/2 tsp salt

2 tsp sugar

2/3 cup unsalted butter, softened

1 large egg

1 cup warm milk

Filling:

4 oz feta cheese, crumbled

4 oz spicy sausage (like chorizo or peppered salami), thinly sliced

Topping:

1 egg, beaten

Sesame seeds or caraway seeds

Instructions:

In a small bowl, dissolve yeast in warm milk with 1 tsp sugar. Let it sit 5–10 minutes until foamy.

In a large bowl, mix flour, salt, remaining sugar, 2/3 cup softened butter, egg, and the yeast mixture. Knead until smooth and elastic. Let rest 15–20 minutes.

Roll dough into a large rectangle, then spread a little softened butter on top. Cut the rectangle lengthwise into two narrower rectangles.

Along one long edge, layer slices of sausage and sprinkle with crumbled feta. Roll each rectangle tightly into a log.

Slice logs into smaller rolls (about 2 inches each) and place them on a parchment-lined baking sheet. Let rise 15–20 minutes.

Brush rolls with beaten egg and sprinkle with sesame or caraway seeds.

Bake at 350°F (180°C) for 18–22 minutes, until golden brown. Cool slightly and serve warm.

Tips:

Use any semi-soft cheese instead of feta for a different flavor.

Swap spicy sausage for ham, turkey, or vegetarian alternatives.

Freeze unbaked rolls and bake later for fresh, warm snacks.
