Flaky, soft, and buttery homemade croissants that are perfect for breakfast, brunch, or snacks. Easy to make with savory or sweet fillings for everyone to enjoy.
Ingredients – Dough:
1 1/2 cups warm milk
1 tbsp sugar
2 1/4 tsp active dry yeast (1 packet)
1 1/2 cups warm water
1 cup vegetable oil
1 1/2 tsp salt
10 cups all-purpose flour
Ingredients – Butter Layer:
1 1/2 cups unsalted butter, softened or vegan margarine
Optional Fillings:
Savory: pizza-style filling, shredded cheese
Sweet: chocolate spread, jam
Instructions:
In a small bowl, combine warm milk, yeast, and sugar. Let it sit 5–10 minutes until foamy.
In a large bowl, mix yeast mixture with warm water, oil, salt, and flour. Knead until a smooth, elastic dough forms. Cover and let rise for 1 hour.
Divide dough into 14 equal portions. Roll each portion into a small circle and let rest 1 hour.
Beat butter until soft. Take 6 dough circles at a time and spread butter between each, stacking 7 layers in total. Repeat with remaining dough.
Roll each stacked group into a large circle. Cut into 24 triangles per circle.
Roll each triangle from the wide end to the tip to form croissants. Place on a parchment-lined baking sheet. Cover and let rise 40 minutes.
Preheat oven to 340°F (170°C). Bake 20–25 minutes until golden brown.
Fill croissants as desired: pizza filling and cheese for savory, chocolate spread or Nutella for sweet. Serve warm.
Tips:
For extra flaky croissants, refrigerate dough for 30 minutes between rolling layers.
Brush with a little plant-based milk or egg wash before baking for shine.
Croissants freeze well; reheat in the oven for best results.
