Coconut Sweet Bread Ingredients:

1 dry coconut (grated),
1 cup brown sugar,
1 1/2 cup flour,
2 tsp baking powder (heaped),
2 tsp vanilla essence (or rum),
1 cup milk,
1 tsp nutmeg,
4 oz (1/4 lb) soft butter,
Raisins,
(Add sufficient water at the end to make consistency like cake mixture)

Makes one 8″ square cake

Mix coconut, flour, baking powder and sugar together.
Add milk and butter and mix well.
Add vanilla, nutmeg and raisins.
Add water to make into consistency of cake mixture.
Let rest 15 minutes in baking dish.
Bake in moderate oven (325) 45 minutes or less.
Test with knife for thorough cooking.
