Turkey rolls with a delicious currant sauce make for an elegant and flavorful meal. Tender turkey fillets stuffed with cream cheese, blueberries, and fresh thyme, cooked to perfection with a savory sauce.
Ingredients:
- 4 turkey breast fillets
- 3.5 oz cream cheese
- 1 cup red currants
- 1 tsp fresh thyme leaves
- 1/2 cup dry white wine
- 3/4 cup chicken broth
- 1 tbsp currant juice
- 1 tbsp butter
- Salt, to taste
- Freshly ground black pepper, to taste
Preparation:
- Tenderize the turkey fillets on one side, then season with salt and pepper. Set aside.
- In a bowl, combine the blueberries (or red currants), thyme leaves, and cream cheese.
- Spread the mixture onto the turkey fillets, roll them up, and secure each roll with kitchen twine.
- Heat butter in a medium pan over medium heat. Add the turkey rolls and cook, turning occasionally, until golden brown on all sides.
- Pour in the wine, chicken broth, and cranberry juice. Cover the pan and simmer for 30 minutes.
