This creamy white bean purée is inspired by Mediterranean flavors. It’s made with soft beans, caramelized onions, and a touch of lemon. Smooth, simple, and full of comfort, it’s perfect as a dip, spread, or side dish.
Ingredients:
2 cups dried white beans (such as navy or cannellini)
3 tablespoons olive oil, plus more for serving
1 large onion, finely chopped
2 teaspoons sugar
Juice of 1 lemon (divided)
4 cups water (or enough to cover beans while cooking)
Salt, to taste
Black pepper, to taste
Fresh parsley or chives, for garnish (optional)
Instructions:
Soak the beans overnight in cold water. Drain and rinse before cooking.
In a pot, warm the olive oil over medium heat and cook the onion until golden. Add the sugar and stir.
Add the beans and water, then simmer until the beans are soft, about 1 hour.
Drain most of the liquid and blend the beans with half the lemon juice until smooth. Add salt, pepper, and more lemon juice to taste.
Serve warm or cold, drizzled with olive oil and sprinkled with herbs.
