Ingredients:
6 medium potatoes (about 2 pounds)
2 egg yolks
3 large eggs, beaten
3 tablespoons all-purpose flour
1 cup breadcrumbs
1 teaspoon salt
½ teaspoon black pepper
Vegetable oil, for frying
Instructions:
Boil the peeled potatoes in salted water until tender, about 15–20 minutes. Drain and mash them until smooth. Mix in the egg yolks, salt, and pepper.
Shape the mashed potatoes into small balls, roughly the size of a walnut. Roll each one in flour, dip into the beaten eggs, then coat with breadcrumbs.
Heat oil in a skillet over medium heat. Fry the potato balls until golden and crispy on all sides, about 2–3 minutes per batch. Drain on paper towels and serve warm.
