Soft, golden Bavarian-style pastries perfect for breakfast, snacks, or parties. Easy to make at home with a simple dough, lightly boiled for a tender texture, and topped with seeds of your choice.

Ingredients – Dough:

8 cups all-purpose flour

2 cups warm water

1/3 cup vegetable oil

2 1/4 tsp active dry yeast (1 packet)

1 tsp salt

Ingredients – Boiling Solution:

4 cups boiling water

4 tsp baking soda

1 tsp salt

Toppings (choose your favorites):

Poppy seeds

Sesame seeds

Sunflower seeds

Flax seeds

Caraway seeds

Instructions:

In a large bowl, combine yeast with warm water and a pinch of sugar. Let it sit 5–10 minutes until bubbly.

Add oil, salt, and flour gradually. Knead until a smooth, elastic dough forms that does not stick to the bowl. Add a little extra flour if needed.

Cover the dough and let it rise in a warm place for 1–1.5 hours, until doubled in size.

Punch down the dough, then divide into portions. Roll into long ropes and shape into pretzels, rolls, or small buns.

In a shallow pan, bring 4 cups of water to a gentle boil. Add baking soda and salt. Using two spoons, carefully lower the dough shapes into the boiling solution for 20–30 seconds until they float to the surface. Remove and place on a greased parchment-lined baking sheet.

Sprinkle with seeds or toppings of your choice.

Bake at 425°F (220°C) for 15–20 minutes, or until golden brown and puffed.

Let cool slightly before serving warm.

Tips:

Brush the tops with a little melted vegan butter for extra shine.

Experiment with sweet toppings like coarse sugar or cinnamon sugar for a dessert-style twist.

These pastries freeze well; reheat in the oven for a few minutes to refresh.
