Ingredients:

Ingredients:

  • 2.2 lbs young zucchinis (about 5 medium)
  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 2 medium onions, chopped (about 2 cups)
  • 1 large egg
  • 1/4 cup rice (partially cooked)
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 to 3 cups broth or strained tomato juice (or water)
  • Fresh dill (optional)
  • Sour cream for serving (optional)

Instructions:

  1. Cut zucchinis in half lengthwise and scoop out the centers.
  2. Chop onions and sauté them in a pan until soft. Add ground beef and pork and cook until browned.
  3. Add partially cooked rice, season with salt and pepper, then stir in the beaten egg.
  4. Stuff the zucchinis with this mixture.
  5. Lightly sauté the stuffed zucchinis on all sides in the same pan.
  6. In the same pan, prepare a roux by frying 2 tablespoons of flour until golden.
  7. Slowly add broth or strained tomato juice, stirring to make a sauce. Pour this sauce over the zucchinis.
  8. Add extra broth, tomato juice, or water as needed so the zucchinis are partially covered.
  9. Simmer gently over low heat until zucchinis are tender and cooked through.
  10. If cooked in water, serve with sour cream. If cooked in tomato juice, garnish with chopped fresh dill.
