Stuffed zucchini is a tasty and easy dish perfect for any meal. This recipe uses ground meat, rice, and cheese for a creamy, satisfying flavor. It’s simple to make and uses common ingredients you probably have at home. Let’s get cooking!
- 10.5 oz ground meat (about ¾ cup packed)
- 1 medium red onion, chopped
- 2 tbsp finely chopped parsley
- Salt, seasoning mix and pepper to taste
- 3 tbsp rice, half-cooked
- 3 medium zucchinis
- 1 large egg
- 3.5 oz shredded Trappist cheese (about ¾ cup)
- 3.5 oz sour cream (about ⅓ cup)
- ¾ cup heavy cream
- Oil for cooking and greasing
- Slice zucchinis lengthwise and scoop out the centers. Lightly salt them.
- In oil, sauté the chopped red onion and ground meat until partially cooked. Add the zucchini centers and cook for a few more minutes.
- Stir in the half-cooked rice, salt, and pepper. Remove from heat and let cool slightly.
- Mix in the egg.
- Place zucchinis in a greased baking dish, brush lightly with oil, and stuff them with the meat mixture. Bake at 400°F for 30 minutes.
- Remove from oven and pour heavy cream over the zucchinis. Spread a mixture of sour cream and shredded cheese on top of each zucchini. Return to oven and bake another 10 minutes until golden and bubbly.
