Marinated Olives Ingredients:
- 7 oz (200 g) olives
- Thyme
- Fennel
- Garlic (thinly sliced)
- 1 lemon (zest, thinly sliced)
- Salt
- Water
- Olive oil
Preparation:
- Rinse the olives thoroughly under cold water and place them in a glass jar.
- Add thyme, fennel, sliced garlic, and thin strips of lemon zest to the jar.
- Sprinkle in some salt and pour water over the olives until they are fully submerged.
- Add a layer of olive oil on top to seal in the flavors.
- Let the olives marinate for one week before serving.
Serving suggestion: Drain the olives and serve them as a snack or appetizer alongside sherry or martinis.
Flavored Olive Oil
Ingredients:
- Olive oil
- 1 clove of garlic
- Fresh basil
- Fresh rosemary
- Dried chili pepper
- Thyme
- Whole black peppercorns (2–3)
Preparation:
- Add the garlic clove, basil, rosemary, dried chili pepper, thyme, and whole peppercorns to the olive oil.
- Let the mixture sit for at least two weeks to allow the flavors to infuse.
- Use this flavored olive oil to enhance salads or other dishes.
Note: Adjust the herbs and spices to your taste. The key is to let the ingredients infuse for a minimum of two weeks to fully develop the flavors.
