Ingredients:
- 350 g of flour (specifically for homemade pasta)
- 3 eggs
- 50 g of blended spinach
Instructions:
- Pour the flour into a suitable bowl and create a well in the center. Add the three eggs into the well. Using a fork or spoon, slowly mix the eggs with the flour.
- Add 50 g of blended spinach to the mixture. Knead the dough with your hands until it becomes smooth. If the dough is still sticky, add a bit more flour.
- Cover the dough or wrap it in cling film and let it rest for 30 minutes.
- Divide the dough into several portions, then roll it out with a rolling pin or, even better, use a pasta machine.
- Roll the dough loosely, ensuring it is not too tight.
- Cut the rolled dough into strips 0.8–1 cm wide using a sharp knife.
- Separate the strips gently to prevent them from sticking together.
- Let them dry for 10–15 minutes before cooking. Serve the tagliatelle with your favorite sauce.
Tip: You can also dry the pasta completely and store it for later use.
