These traditional soups are full of flavor. Made with chicken or mixed meats and fresh vegetables, they’re perfect for warming up and enjoying a healthy meal.

Chicken Soup with Rice

Ingredients:

  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 1 lb chicken breast, diced
  • Salt, to taste
  • 4 ¼ cups water
  • 1 chicken bouillon cube
  • 1 tsp dried thyme
  • 3 tbsp washed rice
  • Pepper, to taste
  • seasoning (optional)
  • Fresh parsley and celery, finely chopped

Preparation:
Sauté the carrots and onion in a little oil until the onion becomes translucent. Add the diced chicken, salt, and cook together for 3–4 minutes. Pour in water and bring to a boil. Add the chicken bouillon cube and thyme, cover, and simmer for about 10 minutes. Add the rice, cover again, and cook until the rice is tender, adding water as needed. Near the end, season with pepper.. Stir in fresh parsley and celery before serving.

Chicken Broth Soup

Ingredients (for 4 servings):

  • 1 whole chicken (about 2.2 lbs)
  • 5 oz root vegetables (parsley, carrot, celery)
  • 2 oz onion
  • Salt and pepper, to taste

Preparation:
Peel the onion and lightly roast it whole. Clean and chop the root vegetables. Place the vegetables and chicken in cold water. Add salt, peppercorns, and the roasted onion. Cook on low heat for about 2 hours. Remove the chicken and cut the meat into smaller pieces. Strain the broth and add noodles if desired. Serve hot.

Homemade Soup with Noodles

Ingredients (for 4 servings):

  • 10.5 oz beef
  • 14 oz home-raised chicken meat
  • 7 oz beef bones
  • 1 bunch root vegetables
  • Salt and pepper, to taste
  • Half an onion

Preparation:
Clean, wash, and cut the root vegetables into pieces. Put vegetables, beef, chicken, and bones in cold salted water. Sauté half of the onion with pepper and add it to the pot. Simmer on low heat until the meat is tender. Serve the meat as a main dish with cooked vegetables or in a sauce. Add noodles to the broth and serve as a soup.
