Goulash with Sausages is a comforting, rustic dish that blends rich flavors with all ingredients. It’s a satisfying one-pot meal that combines potatoes, vegetables like sweet corn, carrots, and peas, and savory sausages for a delightful balance of textures and flavors.

Ingredients for 6 servings:

  • 300 g potatoes
  • 100 g sweet corn (frozen or canned)
  • 100 g carrots (frozen or fresh)
  • 50 g peas (frozen, fresh, or canned)
  • 2 pairs of sausages (such as frankfurters)
  • 50 g rice
  • 1 small onion
  • 2 tablespoons tomato paste
  • Olive oil
  • 1/2 beef stock cube
  • Salt
  • Spices and herbs, as desired (e.g., dill, thyme, basil)

Preparation:

Peel, wash, and cut the potatoes into small cubes. Prepare the other vegetables: if necessary, shell the peas, wash the carrots and cut them into cubes, and finely chop the onion. In a pan, quickly fry the onion in a tablespoon of oil, then add the potato cubes and continue frying.

Add the corn, carrots, peas, and tomato paste. Quickly fry everything, then pour in 750 ml of hot water. (If the soup turns out too thick later, you can add more water.) Add 1/2 of a beef stock cube and simmer for about 25 minutes.

Add the rice to the boiling soup, stir, add salt, and mix in herbs like dill or thyme, if desired. Cook for another 10 minutes.

Slice the sausages into small rounds and add them to the soup. Stir and cook for another 10 minutes.

Optional: Stir in a tablespoon of sour cream and cook for one more minute. Instead of rice, you can mix in some cornmeal or soup noodles toward the end of cooking.
