Ingredients (Serves 4)
2 medium cucumbers, peeled if desired and sliced
2 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil
1 tablespoon finely chopped fresh dill (or parsley for a twist)
1 teaspoon fresh lemon juice
1 small garlic clove, minced
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 teaspoon honey or maple syrup (optional, for balance)
1 tablespoon thinly sliced red onion
Instructions
Peel cucumbers if desired, then slice lengthwise into quarters. Cut each quarter into bite-sized cubes.
In a large bowl, combine apple cider vinegar, olive oil, lemon juice, minced garlic, honey (if using), salt, and pepper. Whisk until well blended.
Add cucumber cubes and red onion slices to the bowl. Toss to coat evenly.
Sprinkle with dill or parsley and gently mix.
Chill in the refrigerator for 15–20 minutes before serving for best flavor.
