While digging through my recipe archive, I found this recipe for a Chocolate Chunk Cake. It’s easy to make and super delicious!
Chocolate Chunk Cake – Ingredients for the Base:
- 8 egg whites
- 8 tablespoons of sugar
- 8 tablespoons of ground hazelnuts
- 3 tablespoons of flour
I baked it for 40 minutes at 180°C (350°F).
Filling:
- 8 egg yolks
- 250 ml milk
- 2 chocolate squares (I used 4 because, well, I had to!)
- 5 tablespoons of sugar
Simmer everything until thickened. Once cooled, add 1 stick of margarine.
Divide the filling in half. In one half, add 1 chopped chocolate bar (cut into small cubes) and 80–100 g of toasted, chopped hazelnuts.
Cut the cake base in half. Spread the filling with the chocolate chunks and hazelnuts on the first layer, place the second layer on top, and cover the cake with the remaining filling.
I used my favorite chocolate, Milka Noisette, but you can mix in any other type you like. For the final filling layer, I melted 3 more chocolate squares and added a spoonful of Nutella (there’s never enough chocolate!).
The entire cake can be finished in about an hour, and it’s truly amazing!
