Cherry and Red Wine Delight is a dessert that feels like a quiet celebration in a glass: warm, spiced, and fragrant with cinnamon and anise. Whether served chilled for a festive party or warm beside a scoop of melting vanilla ice cream, it’s a treat that wraps you in pure comfort and sophistication.
Ingredients:
2 cups pitted cherries
1 ¼ cups good-quality red wine
5–6 tablespoons sugar
1 cinnamon stick
2 star anise pods
1 tablespoon cornstarch
A few tablespoons cherry liqueur (optional)
Vanilla ice cream and whipped cream, for serving
Instructions:
In a small saucepan, combine the pitted cherries, red wine, sugar, cinnamon stick, and star anise.
Bring to a gentle boil, then simmer over low heat for about 15 minutes, until the cherries soften and the sauce thickens slightly.
Dissolve the cornstarch in a small amount of wine, pour it into the saucepan, and stir well to prevent lumps.
Continue cooking for 3–4 more minutes, until smooth and glossy.
Remove from heat, take out the cinnamon stick and star anise, and let the mixture cool slightly.
Stir in the cherry liqueur, if using.
To serve:
Pour the warm cherry mixture into serving glasses or small dessert bowls. Serve it warm or chilled, topped with a scoop of vanilla ice cream and a generous swirl of whipped cream.
