Ingredients:
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 stick (½ cup) unsalted butter, softened
1 ½ cups shredded cheese (cheddar or feta work beautifully)
1 large egg yolk (plus 1 more for brushing)
3 tablespoons sour cream
1 teaspoon caraway or sesame seeds
In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the softened butter with your fingertips or a pastry cutter until the mixture looks crumbly. Add the cheese, one egg yolk, and sour cream, then mix into a soft dough. Cover and refrigerate for 2–3 hours (or overnight for deeper flavor).
Preheat the oven to 375°F and line a baking sheet with parchment paper. Roll out the chilled dough on a lightly floured surface to about ½ inch thick. Cut out small rounds with a biscuit cutter.
