Some side dishes steal the spotlight — and this creamy pea purée is one of them. Soft, buttery, and brightened with a hint of mint, it’s a refreshing twist on classic mashed vegetables. Serve it next to roasted chicken, grilled fish, or even spread on toast for a light meal.

Ingredients

1¼ pounds (about 4 cups) shelled green peas

3½ tablespoons unsalted butter

3 tablespoons heavy cream

A few fresh mint leaves

Salt, to taste

Freshly ground black pepper, to taste

Directions

  1. In a pot of lightly salted boiling water, cook peas with a few mint leaves until tender — about 8 to 10 minutes.
  2. Drain the peas, but reserve a bit of the cooking liquid.
  3. Transfer peas to a blender or use a hand mixer to blend until smooth.
  4. Add butter, salt, and pepper, then pour in the cream. Blend again until silky and warm through.
  5. If the purée feels too thick, add a splash of the reserved cooking liquid until you reach your perfect texture.

Serve warm as a smooth, vibrant side or chilled as a modern appetizer.
