Ingredients
Cake Base
- 1 chocolate sponge cake (8-inch round or similar)
- ¼ cup whole milk
- 2 tablespoons dark rum (optional)
Chestnut Cream
16 ounces chestnut purée (unsweetened or lightly sweetened)
6 tablespoons heavy cream
7 tablespoons powdered sugar
1–2 teaspoons lemon juice (to taste)
Optional: 1 tablespoon sweetened condensed milk for extra creaminess
Topping and Decoration
- 7 ounces marzipan
- 1 cup powdered sugar
- Chocolate glaze (homemade or store-bought)
Instructions
- In a mixing bowl, combine chestnut purée, heavy cream, and powdered sugar until smooth. Stir in lemon juice for a light tang. If you prefer a richer taste, mix in a spoonful of condensed milk and a splash of rum.
- Slice the sponge cake horizontally into three layers. Brush each layer lightly with the milk-rum mixture. Spread the chestnut cream over the bottom and middle layers, then place the final layer on top.
- Knead marzipan with powdered sugar until pliable. Roll out half and drape it gently over the cake, smoothing the edges. Pour the chocolate glaze evenly on top for a glossy finish.
- Use the remaining marzipan to create small shapes — like leaves or ribbons — and arrange them decoratively. Chill the cake for at least 1 hour before slicing.
