Bell Pepper Moussaka is a lighter twist on the classic dish — layers of roasted peppers, savory ground beef, and a creamy topping baked until golden. It’s colorful, and perfect for an easy family dinner.

Ingredients:

8 red bell peppers

1 lb ground beef (or half beef and half pork)

1 medium onion, finely chopped

2 cloves garlic, minced

½ cup diced tomatoes (optional)

½ tsp smoked paprika

½ tsp dried thyme

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

2 large eggs

¾ cup heavy cream (or half-and-half)

1 cup shredded mozzarella or cheddar cheese

2 tbsp chopped parsley for garnish

Instructions:

  1. Preheat the oven to 400°F. Place the peppers on a baking sheet and roast for 20 minutes, turning occasionally, until the skins are blistered. Cover with foil for 10 minutes, then peel and remove the seeds. Slice into strips
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic and cook until soft. Add the ground meat and cook until browned. Stir in tomatoes (if using), paprika, thyme, salt, and pepper. Cook 5–7 minutes, until thickened.
  3. In a greased 9×9-inch baking dish, layer half the roasted peppers, then half the meat mixture. Repeat with remaining peppers and meat.
  4. In a small bowl, whisk together eggs and heavy cream. Pour evenly over the top and sprinkle cheese over everything.
  5. Bake at 400°F for about 40–45 minutes, or until the top is golden brown. Let rest 10 minutes before serving. Garnish with fresh parsley.
