Flaky Feta Pastry made with golden puff pastry, creamy feta and ricotta, and fresh parsley. A savory, easy-to-make treat perfect for snacks, breakfast, or appetizers.
Ingredients (Serves 4–6):
- 1 lb (2 sheets) puff pastry, thawed
- 5 oz feta cheese, crumbled
- 5 oz ricotta cheese (or quark)
- 1 large egg
- 4 tbsp plain yogurt
- 1 small bunch fresh parsley, chopped
Instructions:
- Preheat the oven to 400°F.
- Place one sheet of puff pastry on a baking pan (the one that comes with your oven tray) and prick it lightly with a fork.
- In a bowl, combine the feta, ricotta, egg, yogurt, and chopped parsley. Spread this mixture evenly over the puff pastry.
- Cover with the second sheet of puff pastry, pressing the edges gently to seal.
- Bake on the middle rack for 20 minutes, or until golden brown.
- Serve warm, optionally with extra yogurt on the side.
