Yum Yum Coffee Cake is a soft, buttery treat with a nutty cinnamon topping that melts in your mouth. Perfect for breakfast, brunch, or dessert, this cake pairs beautifully with coffee or tea and can be customized with apples or pears for added sweetness and texture.
Ingredients
½ cup unsalted butter, softened
1 cup coconut sugar (or granulated sugar)
2 large eggs
2 cups whole wheat or all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp pure vanilla extract
1 cup plain Greek yogurt
Nutty Cinnamon Topping:
⅓ cup light brown sugar
¼ cup granulated sugar
1 tsp cinnamon
1 cup chopped almonds or pecans
Optional: 1 finely diced apple or pear for extra moisture
Instructions
Preheat the oven to 325°F (160°C). Grease a 9-inch tube pan or bundt pan.
In a large bowl, beat together butter, coconut sugar, and eggs until creamy. Stir in flour, baking powder, baking soda, salt, vanilla, and yogurt until smooth. If desired, fold in diced apple or pear.
Pour half of the batter into the prepared pan and sprinkle with half of the nut topping. Spread the remaining batter over the top and finish with the rest of the nut mixture.
Bake for 40 minutes at 325°F, then increase the oven to 350°F and bake an additional 10 minutes, or until a toothpick inserted comes out clean. Let cool before slicing.
