Traditional enriched bread “All in a Circle” Ingredients:
- 1 kg of flour
- 250 ml of sour milk or cream
- 250 ml of warm milk
- 2 eggs
- 1 teaspoon of sugar
- 2-3 teaspoons of salt
- 1 small cup of oil
- 20 g of yeast
- 100 g of butter or margarine
- Sesame seeds for sprinkling
Preparation:
- Crumble the yeast into warm milk, then add sugar, a pinch of salt, and 2 tablespoons of flour. Let the mixture sit for at least 10 minutes to rise.
- Add the warm sour milk, two egg whites, and one egg yolk to the risen mixture and mix well. Reserve the second yolk for brushing the bread. Add the remaining flour to form a dough.
- Once the dough has risen, roll it out with a rolling pin and brush it with melted butter. Use a glass or a small cup to cut out circles of dough.
- Arrange the circles in the first layer by placing a coffee cup in the center of the baking tray. Lean the first circle against the cup, overlapping each subsequent circle by half until the circle is complete. Once done, remove the cup and fill the space with two more circles.
- Use the cup again to mark the starting point for the second layer, arranging the circles in the opposite direction. For any leftover dough, roll it out again, cut more circles, and use them to fill the center of the tray. Let the bread rise.
- Brush the risen bread with the reserved yolk mixed with a little milk and oil. Sprinkle with sesame seeds.
- Bake in a preheated oven at 200°C. Reduce the heat slightly during baking as needed.
Potato Bread
Ingredients:
- 2 kg of flour
- 1 kg of white potatoes
- 30 g of yeast (or the size of a walnut if using homemade yeast)
- Salt
- A pinch of caraway seeds (optional)
Preparation:
- Activate the yeast by mixing it with warm water and letting it rise in a warm place.
- Mix the risen yeast with the flour. Add cooked, mashed, and cooled potatoes to the flour mixture. Knead everything together, gradually adding lukewarm water and a little salt, until the dough no longer sticks to your hands or the bowl. If desired, add caraway seeds to the dough.
- Cover the dough and let it rise in a warm place. Once well risen, grease baking trays with oil or butter, dust with flour, and place the dough in the trays.
- Cover the trays and let the dough rest for a short while. Then, bake in a preheated oven for about two hours, until the bread is thoroughly baked.
- Once the loaves are done, brush them with cold water to create a glossy crust.
This bread stays fresh longer than most and remains soft for several days.
