Autumn brings cozy flavors and comforting meals, and nothing warms the soul like a bowl of homemade soup. These two hearty recipes—a rich, golden beef soup and a vibrant lamb vegetable soup—celebrate seasonal vegetables and warming spices. Perfect for lunch or dinner, they are healthy, nourishing, and full of natural flavor. Easy to prepare yet impressive on the table, these soups will make any fall meal feel special.

Beef Soup (Serves 6)

Ingredients:

1 3/4 lbs beef with bones

6 cups water

1 small onion, halved

3 oz carrot, sliced

1 oz celery root, with some leaves

1 oz parsley root, with some leaves

1 tsp kosher salt

1/2 tsp freshly ground black pepper

1/2 tsp dried thyme or oregano (optional)

Instructions:

Rinse beef and place in a large pot with cold water.

Bring to a gentle boil, then add carrot, celery root, parsley root, black pepper, and a sprig of celery leaves.

Roast the halved onion lightly on a skillet with skins on, then add to the pot.

Cover and simmer on low heat for about 2 hours. Halfway through, add salt.

When the meat is tender, add a splash of cold water, let it rest a few minutes.

Remove the meat and strain the broth through a fine sieve.

Reheat the broth and optionally add homemade noodles, small dumplings, or other favorite soup additions.

Garnish with freshly chopped parsley before serving.

Tip: For a clear, rich golden broth with a subtle shimmer of fat, always simmer gently. Starting the meat in cold water extracts maximum flavor into the broth, while starting in hot water preserves more tender, juicy meat.

Lamb Vegetable Soup (Serves 4–5)

Ingredients:

1 lb boneless lamb shoulder, cubed

2 tbsp olive oil

1/2 cup onion, finely chopped

2 oz carrot, diced

2 oz celery, diced

2 oz bell peppers, diced

4 oz fresh tomatoes, blended or chopped

1 clove garlic, minced

2 oz potato, diced

1/4 tsp smoked paprika

1/2 lemon, juiced

Salt and freshly ground pepper, to taste

Fresh parsley, chopped for garnish

Instructions:

Heat olive oil in a medium pot over medium heat. Sauté onion until fragrant.

Add cubed lamb, salt, pepper, garlic, and paprika; sear until lightly browned.

Add diced carrot, celery, and potatoes, keeping the vegetables slightly firm.

Stir in bell peppers and blended tomatoes, simmer gently for 10–12 minutes.

Add lemon juice at the end and cook briefly to combine flavors.

Remove from heat and garnish with fresh parsley. Serve warm.

Tip: Keep the vegetables slightly crisp to preserve flavor and texture. Adjust seasoning and acidity with lemon juice for a bright, fresh finish.
