Soft, tender boiled-style rolls with a golden crust. Perfect for breakfast, sandwiches, or as a snack, topped with sesame, poppy seeds, or coarse salt.
Ingredients – Dough:
4 cups all-purpose flour
2/3 cup warm water
2/3 cup warm milk
2 1/4 tsp active dry yeast (1 packet)
3 tbsp unsalted butter, softened
1/4 tsp salt
1 large egg yolk
Boiling Solution:
4 cups water
2 tbsp baking soda
1 tsp salt
Topping:
1 egg yolk, beaten
Sesame seeds, poppy seeds, or coarse salt
Instructions:
- In a large bowl, mix yeast with flour and salt. Add warm water, warm milk, and knead into a soft dough. Fold in softened butter and let dough rest 1 hour until doubled.
- Preheat oven to 400°F (200°C).
- In a saucepan, combine 4 cups water, baking soda, and salt. Heat until just before boiling.
- Shape dough into rolls and briefly dip each roll into the boiling solution for about 20 seconds. Remove and place on a greased or parchment-lined baking sheet.
- Score the top of each roll lightly, brush with beaten egg yolk, and sprinkle with seeds or coarse salt.
- Bake 15–20 minutes until golden brown. Serve warm.
Tips:
For extra soft rolls, brush with melted butter immediately after baking.
