Soft, tender boiled-style rolls with a golden crust. Perfect for breakfast, sandwiches, or as a snack, topped with sesame, poppy seeds, or coarse salt.

Ingredients – Dough:

4 cups all-purpose flour

2/3 cup warm water

2/3 cup warm milk

2 1/4 tsp active dry yeast (1 packet)

3 tbsp unsalted butter, softened

1/4 tsp salt

1 large egg yolk

Boiling Solution:

4 cups water

2 tbsp baking soda

1 tsp salt

Topping:

1 egg yolk, beaten

Sesame seeds, poppy seeds, or coarse salt

Instructions:

  1. In a large bowl, mix yeast with flour and salt. Add warm water, warm milk, and knead into a soft dough. Fold in softened butter and let dough rest 1 hour until doubled.
  2. Preheat oven to 400°F (200°C).
  3. In a saucepan, combine 4 cups water, baking soda, and salt. Heat until just before boiling.
  4. Shape dough into rolls and briefly dip each roll into the boiling solution for about 20 seconds. Remove and place on a greased or parchment-lined baking sheet.
  5. Score the top of each roll lightly, brush with beaten egg yolk, and sprinkle with seeds or coarse salt.
  6. Bake 15–20 minutes until golden brown. Serve warm.

Tips:

For extra soft rolls, brush with melted butter immediately after baking.

Try adding herbs or cheese to the dough for savory variations.

These rolls freeze well; reheat in the oven to restore freshness.
