Soft homemade crescent rolls just like mom used to make! Golden, fluffy, and perfect plain or filled with cheese, jam, or chocolate.
Ingredients:
8 cups all-purpose flour
2 cups warm milk
2 1/4 tsp active dry yeast
1 tsp sugar
1 tsp salt
9 tbsp unsalted butter or margarine, softened
6 tbsp vegetable oil (about 1 ½ espresso cups)
4 egg yolks
1/2 cup sour cream
For Topping:
1 egg yolk, beaten
Caraway seeds, poppy seeds, or sesame seeds
Small pieces of butter or margarine for each roll
Instructions:
In a small bowl, dissolve yeast with warm milk, sugar, and a little flour. Let it sit in a warm place until foamy, about 10 minutes.
In a large bowl, combine the yeast mixture with flour, salt, softened butter, oil, egg yolks, and sour cream. Knead into a smooth dough. Cover and let rise for about 1 hour, until doubled.
Divide dough into 8 balls. Roll each ball into a circle, then cut into 8 wedges like a pizza.
Roll up each wedge from the wide end to form crescents. Place on a baking sheet lined with parchment paper.
Brush with beaten egg yolk, sprinkle with caraway or poppy seeds, and place a tiny piece of butter on top of each roll.
Bake in a preheated oven at 375°F (190°C) for 15–20 minutes, until golden.
Serving Suggestion:
These rolls are delicious plain, but you can also fill them with cheese, jam, or chocolate before baking for a sweet or savory version.
