Ingredients:
For the Raspberry Layered Dessert:
- Crumbled whole-grain biscuits
- Fresh raspberries
- Sour cream
- Optional: Raspberry puree (made by blending fresh raspberries)
For the Raspberry Pie:
- 1 cup (250g) butter or margarine
- 5 large eggs
- 1 ¼ cups (250g) sugar
- 1 packet vanilla sugar (or 1 tsp vanilla extract)
- 2 ½ cups (300g) all-purpose flour
- 1 packet vanilla pudding powder (1.5 oz or 40g)
- 2 tsp baking powder
- ½ cup (50g) almond flakes
- 2 cups fresh raspberries
For the Raspberry Cottage Cheese Dessert:
- 2 packs frozen mini eclairs
- 2 cups (40% fat) cottage cheese
- 1 can sweetened condensed milk
- 1 pack frozen raspberries
Instructions:
Raspberry Layered Dessert:
In a dessert bowl or glass, layer crumbled biscuits, fresh raspberries, and sour cream. Repeat until ingredients are used. Optionally, drizzle with raspberry puree.
Raspberry Pie:
Cream butter with sugar and vanilla sugar until fluffy. Add eggs one at a time, mixing well. Incorporate vanilla pudding powder, then mix in flour combined with baking powder. Spread batter on a 16×14-inch (40×35 cm) baking tray. Top with raspberries and almond flakes. Bake at 350°F (180°C) for 45 minutes. Dust with powdered sugar before serving.
Raspberry Cottage Cheese Dessert:
Mix cottage cheese with condensed milk until smooth. In a serving bowl, layer frozen eclairs, the cottage cheese mixture, and frozen raspberries. Let it sit for 5-6 hours in the refrigerator. Serve chilled and enjoy!
