Ingredients (for 4 servings):
- 5.3 oz (150g) zucchini
- 4.2 oz (120g) red onion
- 4.2 oz (120g) red bell pepper
- 3.5 oz (100g) green bell pepper
- 3.5 oz (100g) eggplant
- 2.1 oz (60g) milk
- 8 cherry tomatoes
- 2.8 oz (80g) mozzarella cheese
- 2 tbsp olive oil
- 3 basil leaves
- 1 tsp fresh marjoram, chopped
- 1 tsp fresh parsley, chopped
- 1 tsp fresh mint, chopped
- Salt and pepper to taste
Instructions:
- Slice the eggplant into four rings, then cut each ring in half. Slice the onion into eight wedges and cut both the red and green peppers into eight strips. Slice the zucchini into twelve rings.
- Place all the vegetables in a bowl. Drizzle with a bit of olive oil, season with salt, and sprinkle with chopped mint, marjoram, and parsley. Toss to coat.
- Thread the vegetables onto four wooden skewers, alternating colors and types for variety. Grill the skewers for a few minutes on each side until slightly charred and tender.
