Ingredients:

Dough:

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons maple syrup
  • 1/2 teaspoon fine sea salt
  • 1 packet (2 1/4 tsp) instant yeast
  • 3/4 cup warm water (about 110°F)
  • 1 tablespoon avocado oil

Tomato Sauce:

  • 1 1/4 cups pureed cherry tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon garlic powder
  • 1 teaspoon agave syrup
  • Pinch of salt

Toppings:

  • 6 ounces shredded mozzarella
  • 2 tablespoons grated aged cheddar
  • 1/2 teaspoon dried thyme
  • 1 tablespoon extra virgin olive oil

Instructions:

  1. In a small bowl, mix warm water with maple syrup and yeast. Let sit 10 minutes until frothy.
  2. In a large bowl, combine flour and salt. Make a well and add yeast mixture and avocado oil. Stir until combined, then knead on a floured surface 5–6 minutes until soft and elastic. Cover and let rise for 1–1.5 hours until doubled.
  3. Combine cherry tomato puree, oregano, marjoram, garlic powder, agave, and salt in a small saucepan. Simmer for 5–6 minutes until slightly thickened.
  4. Punch down dough, divide in half, and roll each into a 10-inch circle. Place on lightly oiled baking sheets.
  5. Spread tomato sauce evenly, leaving edges bare. Sprinkle mozzarella and cheddar, then dust with thyme and drizzle olive oil on top.
  6. Preheat oven to 430°F and bake 12–15 minutes until crust is golden and cheese melted. Serve immediately.
