Ingredients:
Dough:
- 2 1/4 cups all-purpose flour
- 2 teaspoons maple syrup
- 1/2 teaspoon fine sea salt
- 1 packet (2 1/4 tsp) instant yeast
- 3/4 cup warm water (about 110°F)
- 1 tablespoon avocado oil
Tomato Sauce:
- 1 1/4 cups pureed cherry tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried marjoram
- 1/4 teaspoon garlic powder
- 1 teaspoon agave syrup
- Pinch of salt
Toppings:
- 6 ounces shredded mozzarella
- 2 tablespoons grated aged cheddar
- 1/2 teaspoon dried thyme
- 1 tablespoon extra virgin olive oil
Instructions:
- In a small bowl, mix warm water with maple syrup and yeast. Let sit 10 minutes until frothy.
- In a large bowl, combine flour and salt. Make a well and add yeast mixture and avocado oil. Stir until combined, then knead on a floured surface 5–6 minutes until soft and elastic. Cover and let rise for 1–1.5 hours until doubled.
- Combine cherry tomato puree, oregano, marjoram, garlic powder, agave, and salt in a small saucepan. Simmer for 5–6 minutes until slightly thickened.
- Punch down dough, divide in half, and roll each into a 10-inch circle. Place on lightly oiled baking sheets.
- Spread tomato sauce evenly, leaving edges bare. Sprinkle mozzarella and cheddar, then dust with thyme and drizzle olive oil on top.
- Preheat oven to 430°F and bake 12–15 minutes until crust is golden and cheese melted. Serve immediately.
