Pancakes with Ham and Vegetables are a savory, satisfying dish perfect for lunch or dinner. Soft pancakes are filled with a tasty mix of ham and colorful vegetables, topped with a creamy cheese sauce.
Ingredients:
For the pancakes:
- 3/4 cup all-purpose flour
- Pinch of salt
- 1 large egg
- 1 cup milk
- 1 tbsp butter or margarine, melted
- Oil for frying
For the filling:
- 1/3 cup sliced carrots
- 1/3 cup sliced celery root
- 1/3 cup sliced leeks
- 1 1/2 cups sliced ham
For the cheese sauce:
- 2 cups milk
- 1/4 cup all-purpose flour
- 2 tbsp butter, melted
- 1/4 tsp ground nutmeg
- 1 cup grated Emmental or cheddar cheese
- Salt and pepper, to taste
Instructions:
- Whisk together the flour, salt, egg, milk, and melted butter until smooth. Heat a lightly oiled skillet over medium heat and cook pancakes one at a time until golden brown. Keep warm.
- Steam or sauté the vegetables until tender, then mix with the sliced ham.
- For the sauce, melt butter in a saucepan, stir in flour, then gradually whisk in milk. Cook until thickened, seasoning with nutmeg, salt, and pepper. Stir in the cheese until melted.
- Fill each pancake with the ham and vegetable mixture, roll up, place in a baking dish, and pour the cheese sauce over the top.
- Bake at 400°F for 10–15 minutes until golden and bubbly. Serve warm.
