Pancakes with Ham and Vegetables are a savory, satisfying dish perfect for lunch or dinner. Soft pancakes are filled with a tasty mix of ham and colorful vegetables, topped with a creamy cheese sauce.

Ingredients:

For the pancakes:

  • 3/4 cup all-purpose flour
  • Pinch of salt
  • 1 large egg
  • 1 cup milk
  • 1 tbsp butter or margarine, melted
  • Oil for frying

For the filling:

  • 1/3 cup sliced carrots
  • 1/3 cup sliced celery root
  • 1/3 cup sliced leeks
  • 1 1/2 cups sliced ham

For the cheese sauce:

  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 2 tbsp butter, melted
  • 1/4 tsp ground nutmeg
  • 1 cup grated Emmental or cheddar cheese
  • Salt and pepper, to taste

Instructions:

  1. Whisk together the flour, salt, egg, milk, and melted butter until smooth. Heat a lightly oiled skillet over medium heat and cook pancakes one at a time until golden brown. Keep warm.
  2. Steam or sauté the vegetables until tender, then mix with the sliced ham.
  3. For the sauce, melt butter in a saucepan, stir in flour, then gradually whisk in milk. Cook until thickened, seasoning with nutmeg, salt, and pepper. Stir in the cheese until melted.
  4. Fill each pancake with the ham and vegetable mixture, roll up, place in a baking dish, and pour the cheese sauce over the top.
  5. Bake at 400°F for 10–15 minutes until golden and bubbly. Serve warm.
