Ingredients:

  • 2 lbs potatoes (about 4 medium), boiled but still firm
  • 2 lbs carrots (about 5 large), boiled but still firm
  • 2 cups mayonnaise
  • 1 cup sour cream
  • 1 large garlic clove, finely minced
  • 1 tsp salt, divided
  • ½ tsp black pepper, divided
  • ¾ cup chopped roasted peanuts (divided)
  • 14 oz (about 1 cup) deli ham, shredded
  • 1 cup chopped dill pickles (about 3 medium pickles)
  • ⅓ cup whole-grain mustard
  • ½ cup toasted sesame seeds (unroasted or lightly toasted for nuttier flavor)
  • ¼ cup chopped fresh parsley (for freshness)
  • 1 tsp smoked paprika (for a subtle smoky kick)

Instructions:

Prepare the Base Layers:
Boil the potatoes and carrots just until tender but firm enough to grate. Drain well and let cool.

Mix the Dressing:
In a bowl, combine mayonnaise, sour cream, minced garlic, ½ tsp salt, and ¼ tsp pepper. Whisk until smooth.

First Layer:
Coarsely grate the potatoes and spread evenly in the bottom of a 9×13 inch dish. Season with a pinch of salt and pepper. Spread half of the mayo-sour cream mixture over the potatoes. Sprinkle with ⅓ cup chopped peanuts.

Second Layer:
Grate the carrots and spread over the potato layer. Season lightly with salt and pepper. Spread the remaining mayo-sour cream mixture on top of the carrots. Sprinkle another ⅓ cup chopped peanuts evenly.

Third Layer:
Spread the shredded ham over the carrot layer. Mix ⅓ cup mayo, ⅓ cup sour cream, and the whole-grain mustard together. Spread this mustard cream over the ham. Sprinkle the last ⅓ cup chopped peanuts and smoked paprika evenly on top.

Fourth Layer:
Spread chopped pickles evenly over the ham layer. Top with the remaining mustard-mayo-sour cream mix. Finally, sprinkle the toasted sesame seeds and chopped fresh parsley over the whole cake.

Chill:
Cover and refrigerate overnight to let flavors meld and the layers firm up.
