Dogwood berries and cherries are celebrated for their impressive health benefits.   • Additional Uses: The fruit and bark of the dogwood tree are used in teas to address sore throats, anemia, hemorrhoids, kidney issues, and mild diabetes.

Recipes and Preparations:

1. Dogwood and Cherry Juice:

  • Wash 4.5 lbs (2 kg) ripe cherries and chop them.
  • Boil 12 cups (3 liters) water in a large pot, add the cherries, and simmer for 20 minutes.
  • Remove from heat, let cool slightly, and strain through a fine cloth or press.
  • Simmer the remaining pulp for another 15 minutes, combine with the first juice, add 2¼ lbs (1 kg) sugar, and heat until dissolved.
  • Pour hot juice into sterilized bottles. Refrigerate after opening. Dilute with still or sparkling water before serving.

2. Cherry Liqueur:

  • Combine 2¼ lbs (1 kg) cherries, 8 cups (2 liters) water, and 2¼ lbs (1 kg) sugar in a pot. Heat to dissolve sugar and bring to a gentle boil.
  • Cool, strain, and mix with 1 quart (1 liter) rum.
  • Place reserved whole cherries in bottles and pour the liqueur over them. Seal and store in a cool, dark place.

3. Cherry Jam:

  • Wash and pit 2¼ lbs (1 kg) ripe cherries. Soak briefly in hot water, then drain.
  • Combine cherries with equal weight sugar (1:1) in a pot and cook over medium heat, stirring frequently for 2–3 hours until thickened.
  • Pour into sterilized jars, allow to cool, seal, and store in a dry place.

4. Cherry Sweet Preserve:

  • Pit 2¼ lbs (1 kg) firm cherries using a small needle or pitter.
  • Dissolve 1¾ cups (400 g) sugar in water to form a syrup, add cherries, and cook until slightly thickened.
  • Remove foam, cover with a damp cloth overnight, then transfer to clean jars. Seal and store in a cool, dark place.

Teas:

  • Bark Tea: Boil 0.2–0.35 oz (5–10 g) dried dogwood bark in 7 fl oz (200 ml) water for 5 minutes. Let steep 20 minutes, strain, and drink unsweetened 2–3 times daily after meals.
  • Berry Tea: Brew dried dogwood berries similarly for a gentle digestive tea.
