Ingredients:
- 2 cups tomato juice
- 2 cups water (or part cream for a richer version)
- 1 bay leaf
- 2 tablespoons chopped fresh basil
- 2 sprigs parsley
- 2 garlic cloves, quartered
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- Salt and black pepper to taste
Preparation:
Simmer tomato juice, water, bay leaf, and garlic for 5 minutes. Add balsamic vinegar and seasoning. Cook another 5 minutes on low heat. Finish with olive oil, basil, and parsley.
Rustic Tomato Bread Soup

Ingredients (serves 4):
- 4 cups stale bread cubes
- 6 tablespoons olive oil
- 3 garlic cloves, crushed

Preparation:
