This refreshing Italian potato salad is light, vegan-friendly, and bursting with flavor. Tender potatoes are combined with crisp vegetables, black olives, and fresh herbs, all coated in a zesty Italian dressing. Perfect for picnics, barbecues, or as a healthy side dish any time of year.

Ingredients

  • 1 lb (450 g) new red potatoes
  • ¼ cup water
  • 1 small red onion, thinly sliced
  • Several ripe black olives, sliced (optional)
  • 1 small cucumber, chopped
  • 1 medium tomato, chopped
  • ½ cup fat-free Italian dressing
  • 2 tbsp fresh parsley, chopped

Instructions

1. Cook the Potatoes
Wash and slice the potatoes into ¼-inch rounds. Place them in a microwave-safe 1.5-quart dish with water. Cover and microwave on high for 9–10 minutes, stirring once, until tender. Drain and let cool completely.

2. Combine the Ingredients
In a large bowl, mix the cooled potatoes with red onion, olives, cucumber, tomato, Italian dressing, and parsley. Toss gently until all ingredients are evenly coated.

3. Chill and Serve
Refrigerate until well chilled. Stir before serving and enjoy this vibrant, fresh salad.
