This garlic chutney is a fiery, aromatic condiment inspired by classic Indian flavors. Rich garlic notes blend with tangy tomato and smoky dried chilies to create a bold spread that instantly lifts even the simplest meal. It’s quick to prepare, uses pantry staples, and delivers big flavor in every spoonful.

Ingredients

  • 25 garlic cloves, peeled
  • 1 medium tomato, roughly chopped
  • 5 dried red chilies
  • Salt, to taste
  • 2–3 teaspoons oil, divided

Instructions

1. Sauté the base
Warm 1–2 teaspoons of oil in a pan over medium heat. Add the garlic cloves, tomato pieces, and dried red chilies. Cook, stirring often, until the garlic turns lightly golden and the tomato breaks down and softens. The chilies should release their aroma without burning.

2. Blend
Remove the pan from heat and allow the mixture to cool slightly. Transfer everything to a blender, season with salt, and blend until you get a smooth, thick paste.

3. Cook the chutney
Heat the remaining oil in the same pan. Add the blended paste and cook on medium heat, stirring continuously. Let it simmer until the chutney thickens and a light sheen of oil appears on the surface.

4. Serve
Cool slightly before serving. This chutney is excellent with dosas, idlis, parathas, or simply mixed into warm rice.
