How Do You Seal Jam Jars Properly?
Sterilize Jars & Lids
Clean jars and lids thoroughly. Place jars upside-down in a 200–212°F oven (90–100°C) for 15–20 minutes. Boil lids and bands separately. Remove them carefully and let everything air dry completely.
Fill Jars with Hot Jam
Immediately after cooking, spoon hot jam into the warm jars, leaving approximately ¼ inch (½cm) of headspace. This space helps create a tight seal.
Seal & Invert
Wipe the jar rims clean, then close with a matching lid and screw band. Turn each jar upside down for 5–15 minutes—as it cools, a vacuum forms inside, sealing the lid and preventing contamination.
Cool & Store
Once cooled, return jars upright. Store them in a cool, dark place like a pantry. Properly sealed jars of jam can remain shelf-stable for up to a year.
Why This Works:
Oven-sterilizing kills bacteria and warms jars to prevent cracking when filled with hot jam.
Headspace combined with inversion helps expel air and form a vacuum seal.
