Ingredients: 1 cup granulated sugar, 1 cup honey, 1/2 cup margarine, 6 eggs separated, 2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 2 tablespoons gingerbread spice blend, 1 cup light cream (about 18% fat).
Chocolate coating: 0.5 oz dark chocolate, 0.35 oz semisweet chocolate, 0.3 oz butter. Optional decoration: sugar snowflakes.
Method: Combine the margarine, sugar, honey, and gingerbread spices in a saucepan and warm gently until fully melted and blended. Add the cream and heat until hot but not boiling. Set aside and allow the mixture to cool slightly. Whisk in the egg yolks, then stir in the flour mixed with baking soda and cinnamon. Beat the egg whites separately until airy and softly structured, then fold them carefully into the batter. Pour the batter into two parchment-lined loaf pans. Bake at 350°F for about 55–60 minutes, until the centers are set. Cool completely before glazing.
Chocolate coating: Melt the chocolates with the butter over a hot water bath, stirring until smooth and glossy. Adjust the chocolate ratio to taste if desired.
To finish: Spoon the warm chocolate over the cooled cakes, letting it drip naturally over the surface. Decorate lightly and allow the coating to set before slicing.
