Golden zucchini medallions combine tender shredded veggies, lean turkey, and melted cheese into a delicious, healthy meal that’s quick to prepare and perfect for the whole family.

Ingredients

Vegetable base:

  • 2 eggs
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • A pinch of sweet paprika
  • 2 medium zucchini
  • 2 small potatoes
  • 1 medium carrot
  • 1 small yellow onion
  • 1 garlic clove
  • 2 tablespoons breadcrumbs
  • 2 tablespoons chopped fresh parsley

Turkey mixture:

  • 8 oz ground turkey
  • 1 small shallot or onion, finely chopped
  • 1 garlic clove, minced
  • A pinch of dried thyme
  • ¼ teaspoon salt
  • 1 egg yolk
  • ½ cup shredded mozzarella or cheddar cheese
  • Olive oil or avocado oil (for frying or baking)

Preparation

Grate the zucchini, sprinkle with salt, and let it sit for 10 minutes. Squeeze out excess liquid thoroughly. Grate the potatoes and carrot, and finely chop the onion and garlic. In a large bowl, combine all vegetables with eggs, breadcrumbs, parsley, and seasonings.

In a separate bowl, mix the ground turkey with chopped shallot, garlic, thyme, salt, egg yolk, and shredded cheese until well combined. Add this mixture to the vegetable base and mix everything thoroughly.

Form the mixture into small medallions using your hands or a spoon. Fry them in a lightly oiled skillet over medium heat until golden brown on both sides, about 4–5 minutes per side. Alternatively, bake on a parchment-lined tray at 400°F (200°C) for about 25 minutes, turning halfway through, until crisp and cooked through.
