Simple and tasty dish, these chicken meatballs combine tender chicken breast, creamy cheese, and flavorful spices for a comforting meal.
Ingredients:
- 1 large chicken breast (about 8 oz)
- 2 large eggs
- 7 tablespoons butter (softened)
- 1 small bread roll (about 2 oz), soaked in 1/4 cup milk
- 3.5 oz hard cheese (like cheddar or kasseri), grated (about 1 cup)
- 1 small carrot, grated (about 1/3 cup)
- 3 garlic cloves, finely chopped
- Oil for frying (vegetable or canola)
- Salt and pepper to taste
- About 1/4 cup all-purpose flour for coating
Preparation
Remove any bones from the chicken breast and grind the meat together with the bread roll soaked in milk. Add grated cheese, eggs, finely chopped garlic, grated carrot, and softened butter. Season with salt and pepper, then mix everything well.
Shape the mixture into meatballs. Roll each meatball lightly in flour. Fry them in hot oil until golden brown on all sides.
Serve warm with tartar sauce or alongside boiled rice and a fresh salad.
