This fresh no-cook tomato preserve is easy to make and full of natural flavor. It uses simple ingredients and doesn’t require any cooking. Perfect for enjoying the taste of tomatoes all year round.

Ingredients:

  • 11 pounds tomatoes, peeled and chopped into small pieces
  • 3–4 small hot peppers, chopped
  • 1 large bunch fresh parsley, chopped
  • 2 tablespoons salt (adjust to taste, slightly saltier than a regular salad)
  • 1 packet (about 1 tablespoon) pickling powder (vinobran)

Instructions:

  1. Peel the tomatoes and remove any green or damaged parts. Chop them into small cubes or grind them using the largest setting on a meat grinder.
  2. Chop the hot peppers and parsley, then mix them thoroughly with the tomatoes.
  3. Add salt and pickling powder, mixing well to combine.
  4. Let the mixture rest uncovered in a large bowl at room temperature for 24 hours, stirring occasionally.
  5. After 24 hours, pack the mixture tightly into clean jars and seal them with airtight lids. Store in a cool, dark place.

Optional: For added flavor, you can mix in minced garlic before sealing, or add chopped red onion when serving for a fresh twist.
