A festive French Christmas cake made with soft walnut sponge, rich chocolate layers, and a caramel finish. A beautifully layered holiday dessert that brings warm, nostalgic flavors to your Christmas table.

Ingredients

For the sponge:

  • 6 eggs
  • Ground walnuts (about a bowlful)
  • Sugar
  • Chocolate powder
  • 2 tablespoons cocoa
  • A splash of milk
  • A little flour
  • 2 packets of baking powder

For the chocolate cream:

  • Chocolate powder
  • Milk

For the caramel topping:

  • Sugar
  • A little water

Instructions

Finely grind the walnuts until soft and sandy. Separate the egg yolks from the whites. Whisk the yolks with sugar until they become pale and airy. In another bowl, beat the egg whites into a firm, glossy foam.

Combine the walnuts, chocolate powder, milk, flour, and baking powder with the yolk mixture. Carefully fold in the whipped egg whites, keeping the mixture light and fluffy.
Line a baking tray with parchment paper and bake the sponge at 355°F (180°C) for about 25 minutes, or until the center springs back lightly when touched.

To make the cream, gently heat the chocolate powder with milk until you get a smooth, glossy mixture. Spread this warm cream evenly over the cooled sponge.

For the caramel, heat sugar with a bit of water until it melts and turns golden. Drizzle the hot caramel in thin lines over the chocolate layer. Once it sets, you can break it into delicate shards or sprinkle chopped walnuts on top for decoration. Let the cake chill before slicing.
