I still remember the first time I had calamari like this — not rubbery, not greasy, but impossibly light and golden, with the smell of dried oregano drifting up from the plate and the Aegean glittering in the background. That’s the magic of doing it the Greek way. The squid stays tender inside its shattering crust, and a final scatter of coarse sea salt and oregano while it’s still hot makes every ring taste like a seaside taverna. A squeeze of lemon and a dunk in warm marinara? That’s all you need.
Prep Time: 15 minutes | Cook Time: 8 minutes | Total Time: 23 minutes
Servings: 4 as an appetizer, 2 as a main
Ingredients
For the calamari:
- 1½ lbs fresh squid, cleaned, bodies cut into ½-inch rings, tentacles left whole if small
- 1½ cups all-purpose flour
- 1 tsp fine sea salt
- ½ tsp freshly ground black pepper
- 1 tsp dried oregano, plus more for finishing
- ½ tsp garlic powder
- ¼ tsp cayenne pepper (optional)
- Vegetable or canola oil, for frying
- Coarse sea salt, for finishing
- Lemon wedges, for serving
For the dipping sauce:
- 1 cup marinara sauce, warmed
- 1 small garlic clove, minced
- ½ tsp dried oregano
- Pinch of red pepper flakes
Instructions
- Dry the squid. Pat the calamari rings and tentacles very dry with paper towels — moisture is the enemy of crispiness. Let them sit on a fresh layer of paper towels while you prep everything else.
- Season the flour. In a large bowl, whisk together the flour, fine sea salt, black pepper, 1 teaspoon oregano, garlic powder, and cayenne if using.
- Heat the oil. Pour oil into a heavy-bottomed pot or Dutch oven to a depth of about 2 inches. Heat over medium-high until it reaches 365°F (185°C) on a deep-fry thermometer.
- Dredge in batches. Toss a handful of calamari in the seasoned flour, shake off the excess, and carefully lower into the hot oil. Fry for 2 to 3 minutes, until puffed and deeply golden. Do not overcrowd the pot — work in 3 to 4 batches.
- Drain and season. Use a slotted spoon to transfer the fried calamari to a wire rack set over a baking sheet (or a paper towel-lined plate). Immediately sprinkle with coarse sea salt and a pinch of dried oregano while still hot.
- Make the sauce. While the calamari drains, stir the minced garlic, oregano, and red pepper flakes into the warm marinara.
- Serve. Pile the calamari high on a platter, tuck lemon wedges around the edges, and place the warm marinara in a small bowl alongside. Serve right away — this is not a dish that waits.
Chef’s Tips
- If your calamari rings are thicker than ½ inch, score the inside lightly with a knife so they curl into perfect circles when they hit the oil.
- For extra crunch, replace ½ cup of the all-purpose flour with cornstarch.
- No thermometer? Drop a pinch of flour into the oil — if it sizzles and rises to the surface instantly, you’re in the right zone.
