Ingredients (Serves 4):
- 7 oz porcini mushrooms, finely chopped
- ½ cup fresh parsley, chopped
- ½ oz garlic (about 3 cloves), minced
- 1 large egg
- 2 tbsp all-purpose flour
- 2 tbsp olive oil (or more, to taste)
- Salt and black pepper, to taste
- 4 cups water
Instructions:
- Finely chop the porcini mushrooms, sprinkle with a little salt, and let them sit for 15 minutes.
- Rinse the chopped garlic and parsley lightly, then add the drained mushrooms. Sauté the mixture in olive oil over medium heat for 10 minutes.
- Add 4 cups of water to the pan and bring to a gentle boil.
- In a separate bowl, whisk the egg with the flour until smooth. Gradually stir this mixture into the simmering soup.
- Continue cooking until the soup thickens slightly and develops a rich color.
- Adjust seasoning with salt and pepper, then serve warm.
