A cozy and flavorful wild mushroom soup made with fresh porcini mushrooms, garlic, and parsley, thickened with a touch of egg and flour. Perfect for a healthy, comforting meal any day.

Ingredients (Serves 4):

  • 7 oz porcini mushrooms, finely chopped
  • ½ cup fresh parsley, chopped
  • ½ oz garlic (about 3 cloves), minced
  • 1 large egg
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil (or more, to taste)
  • Salt and black pepper, to taste
  • 4 cups water

Instructions:

  1. Finely chop the porcini mushrooms, sprinkle with a little salt, and let them sit for 15 minutes.
  2. Rinse the chopped garlic and parsley lightly, then add the drained mushrooms. Sauté the mixture in olive oil over medium heat for 10 minutes.
  3. Add 4 cups of water to the pan and bring to a gentle boil.
  4. In a separate bowl, whisk the egg with the flour until smooth. Gradually stir this mixture into the simmering soup.
  5. Continue cooking until the soup thickens slightly and develops a rich color.
  6. Adjust seasoning with salt and pepper, then serve warm.
