Ice Cream with Figs
This specialty from Dalmatian cuisine is an excellent dessert for hot days. Ingredients for 4 people: 12 small ripe figs, 360 g of sugar, 100 g of almonds, 200 g of raspberries, juice of one lemon, 1 vanilla bean, 500 ml of milk, 6 egg yolks, 4 tablespoons of liqueur, a handful of sliced almonds, 100 ml of whipped cream.

Preparation:
Pour boiling water over the almonds to peel them more easily. Blend the peeled almonds with 20 g of sugar until smooth. To make the syrup, cook 140 g of sugar with 120 ml of water for 25 minutes. Mash the raspberries, strain them, and mix with the syrup and lemon juice. Chill the mixture. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds to the milk and bring to a boil. Beat the egg yolks with sugar, then slowly pour in the milk while whisking constantly. Cook the mixture over steam until the cream thickens, but do not let it boil. Add the blended almonds and freeze the mixture into ice cream.

Pour liqueur over the washed and dried figs. Toast the sliced almonds. On each plate, arrange the ice cream, three tablespoons of whipped cream, and figs. Drizzle everything with raspberry sauce and sprinkle with toasted almonds.
