Roasted Duck

Ingredients:

  • 1 duck

  • A few apples

  • 1-2 oranges

  • 1 lemon (juice)

  • 1 clove garlic

  • Salt, pepper

  • Celery leaves

  • 1/2 cup white wine

Preparation:

  1. Clean the duck by wiping it with a damp cloth inside and out. Rub the inside with salt and pepper, then let it sit for 10 minutes. After that, coat it with lemon juice.

  2. Stuff the duck with half-sliced apples, orange slices, and a few celery leaves.

  3. Poke the skin with a fork (outside) and rub it with cut garlic, salt, and pepper.

  4. Place the duck breast-side up on a roasting rack and bake at 375°F for about 30 minutes.

  5. After 30 minutes, remove excess fat from the pan, add the white wine, and return the duck to the oven. Baste frequently while cooking.

  6. The duck should cook for about 40 minutes per kilogram of meat.

  7. This dish is slow-cooked and requires patience, precise temperature, and baking time.

Stuffed Duck

Ingredients:

  • 1 duck (about 6.6 lbs)

  • 5 oz duck liver

  • 2 tbsp clarified butter

  • 2 shallots

  • 5 oz mushrooms

  • 5 oz ground beef (from the neck)

  • 1.7 oz dried plums

  • 1 1/2 tbsp brandy

  • 5 oz smoked bacon

  • 1 egg

  • 10 cooked chestnuts, peeled

  • 3.5 oz lard

  • Salt and pepper

Preparation:

  1. Clean the duck liver from veins and briefly fry it (2-3 minutes) in a pan with clarified butter, then remove it from the pan and chop it finely.

  2. In the same pan, add chopped shallots, sliced mushrooms, ground beef, dried plums (cut into strips), and fry everything for 10 minutes. Set aside to cool.

  3. In a bowl, mix the cooled meat mixture with the beaten egg, chopped bacon, chestnuts (cut into quarters), and brandy. Season with salt and pepper and stir gently.

  4. Season the duck inside and out with salt and pepper, then stuff it with the prepared mixture. Seal the opening to prevent the stuffing from spilling out during cooking.

  5. Brown the stuffed duck on all sides in a pan with lard, then transfer it to a roasting pan.

  6. Roast at 250°F for about 3 hours (1 hour per kilogram).

  7. For a crispier crust, increase the temperature to 350°F for the last 10 minutes of roasting.

  8. For a finishing touch, pour some of the roasting sauce into a pan, season, and thicken if needed, then serve with the duck.

Duck with Vegetables

Ingredients:

  • 1 duck breast fillet (about 8.8 oz)

  • Salt, pepper

  • 1 tbsp oil

  • 2 carrots

  • 2 young red onions

  • 4 small tortillas

  • 2 tbsp spice dressing

Preparation:

  1. Wash the duck breast and pat it dry. Make several shallow cuts in the skin.

  2. Season the duck with salt and pepper. In a hot pan, sear the duck breast skin-side down for about 5 minutes.

  3. Turn the duck over and cook for another 15 minutes on medium heat.

  4. Wash the carrots and slice them thinly. Peel and slice the red onions into strips.

  5. Using a spoon, add some oil from the duck to a pan, and sauté the carrots, stirring occasionally until they brown. Add the onions, cook, then season with salt and pepper.

  6. Once the duck is done, slice it thinly.

  7. Warm the tortillas if desired and cut them in half. Spread the spice dressing on the tortillas and form pockets.

  8. Fill the pockets with the sautéed vegetables and sliced duck breast.
