Blueberry Jam
Ingredients:
5 ½ lbs wild blueberries
2 cups Dr. Oetker 2:1 gelling sugar (or substitute)
2 cups muscovado sugar
1 cup Tawny Port wine
7 cloves, ground into a powder
2 tsp ground cardamom seeds
1 medium quince, chopped or grated with the skin
Instructions:
Combine the grated quince with muscovado sugar and half the port wine in a large pot. Simmer gently over low heat for about 15 minutes, stirring occasionally.
Add half of the blueberries and cook for another 10 minutes. Stir in the ground cloves and cardamom, then blend the mixture with an immersion blender until smooth.
Add the remaining port wine and blueberries. Bring the mixture back to a gentle boil, then simmer on low heat for an additional 15 minutes.
Mix in the gelling sugar, stirring until dissolved, and cook for 5 more minutes.
Pour the hot jam into sterilized jars while still hot and seal with sterilized lids.
Notes:
Use wild blueberries for the best flavor. Cultivated varieties don’t yield the same results.
If you prefer not to use gelling sugar, you can replace it with an additional quince and adjust the muscovado sugar to 4 cups.
To prevent foaming during cooking, add 1% sunflower oil to the mixture.
Reducing the cooking time can help preserve the fresh taste of the fruit.
Raspberry and Red Grapefruit Jam
Ingredients:
1 ¾ lbs fresh raspberries
1 ⅓ lbs red grapefruit segments (peeled and de-seeded)
1 packet gelling sugar (2:1 ratio)
2 ½ cups granulated sugar
Instructions:
- Rinse the raspberries gently and let them drain. Peel the grapefruits completely, removing both the outer skin and white pith, then cut them into fillets. Measure 1 ⅓ lbs of prepared grapefruit segments.
- In a large pot, combine the raspberries, grapefruit, gelling sugar, and granulated sugar. Stir until well mixed.
- Place the pot over high heat and stir continuously until the mixture reaches a boil. Boil for 3 minutes while stirring constantly.
- Remove from heat and skim off any foam that forms on the surface.
- Pour the hot jam into sterilized jars, filling them to the top. Seal immediately with sterilized lids.
- Turn the jars upside down and let them sit for about 5 minutes. Turn them upright and store in a cool, dark place.
This jam’s unique blend of tart grapefruit and sweet raspberries offers a refreshing twist on traditional flavors!
